The other day I was in the produce section trying to decide what fruit to buy for a party in January and it felt strange. Snow was everywhere, I was praying I didn’t break an ankle on all of the ice in the parking lot and my weather app said the real feel was 20 degrees. I definitely knew watermelon was out of the question and as I looked around at everything else, I couldn’t for the life of me figure out what to get. I even thought to myself, well maybe we don’t need fruit at a winter party. But then I thought you have to have some kind of fruit as an option at a party. For crying out loud, I’m the plant-based one at the party so I can’t show up without any fruit. So there I was circling the produce section looking like a secret shopper and after way too much time, I decided on two mixed bowls of a bunch of different fruits. Were they in season? Not necessarily yet I knew that. Did people eat it? Yes! And even if they didn’t it would not have mattered because really…you have to have some kind of fruit at every party.
Even though it seems as if nothing is in season during the winter, the list of what produce is in season is surprisingly long with a lot of great choices. We’ve picked a few of our favorites, avocados, carrots, pineapple, and limes, and found some recipes that are a great way to enjoy each one. Bon Appétit!
The Best Guacamole
Oh yes, time to hit the avocado bin because avocados are still in season during the dead of the winter. Guacamole can be something that can go terribly right or terribly wrong when you whip it up without any set instructions, so here’s a fool-proof, authentic guacamole recipe from Cookie + Kate. The Best Guacamole recipe is a creamy and fresh 6 ingredient masterpiece. As for what avocados to get, you want ripe but not over-ripe Hass avocados, which are the standard grocery store variety with slightly bumpy skin. Look for avocados that yield a bit to a gentle squeeze, but avoid using avocados that are mushy or stringy on the inside. You got this, you got this!
Crispy Baked Carrot Fries
Using carrots to make fries is going to be much more of a known item to the mainstream in the future, I’m calling it right here and now. These Crispy Baked Carrot Fries from PlantYou are perfectly seasoned with a mix of dried dill, paprika, and garlic salt. In need of a dipping sauce to pair it with? This Vegan Sriracha Mayo from Avocado Centric goes perfectly.
Vegan Thai Pineapple Curry
Every now and then you come across a recipe that makes you want to tie on your apron ASAP and drop whatever you’re doing to head to the kitchen and this is one of them. Next time you want a hearty and healthy combo, try this gem out. If you’re into curry, you’re really going to be into this Vegan Thai Pineapple Curry from Skinny Spatula. The sweet and savory combination is A+ and all of the different flavors create a one-of-a-kind plant-based dinner.
Easy Cinnamon Baked Apples
How underrated apples can be sometimes! Especially when it comes to using them for a quick, healthy, and tasty dessert like this Easy Cinnamon Baked Apples recipe from Minimalist Baker does. This Easy Cinnamon Baked Apples requires simple ingredients and 1 bowl, plus it is naturally sweetened and grain and gluten-free. Want to take it up a notch? One of my favorite simple things to do with any baked apple recipe is to add some Oatly Vanilla Frozen Dessert on top.
Vegan Lime Pudding Cups
I am completely obsessed with limes. Limes are by far my favorite food and my solution to anything food-related is usually “just add lime”. So as you can imagine these Vegan Lime Pudding Cups from Fresh Water Peaches are little edible miracles to me. Creamy, light, and made with only plant-based ingredients, the recipe only takes a few minutes and all you need is a blender. If you’re looking to jazz them up, you can add different toppings…or just add some more lime.
