Banana Breakfast Cookies

Perfect for busy mornings, breakfast on-the-go, or a sweet snack, these healthy cookies are vegan, gluten-free, and sweetened with banana and maple syrup.
Banana Breakfast Cookies Recipe

INGREDIENTS
½ cup almond slivers
½ cup coconut flakes
½ cup walnuts
1 cup rolled oats
½ tsp ground cinnamon
1 tsp ground flax
½ tsp sea salt
3 tbsp maple syrup
1 cup mashed banana
¼ cup almond milk
2 tbsp coconut oil
1 tsp vanilla extract
INSTRUCTIONS
1. Preheat the oven to 350 degrees. Prepare a baking sheet with unbleached parchment paper.
2. In a big mixing bowl, combine the nuts, oats, cinnamon, ground flax and salt. In a blender, combine the maple syrup, banana, almond milk, coconut oil and vanilla extract. Pour into the oat mixture and fold everything together to combine.
3. Use a cookie scoop to place dollops of dough onto the lined baking sheet. Press flat with the back of a spoon and bake for 25 minutes until the edges start to brown.
4. Remove from the oven and let cool. Store in the fridge for a week.
