Black Bean and Sweet Potato Tacos

All you need is a handful of ingredients and these tacos come together in under 45 minutes! A great weeknight dinner, these vegan tacos are underrated. Sweet potatoes and black beans are such a great combination in a variety of dishes but really make these tacos a hit. Add some crunch with pickled onions or fresh homemade guacamole!

 Black Bean and Sweet Potato Tacos Recipe

Prep Time: 10 minutes | Cook Time: 30 minutes | Total Time:  40 minutes | Servings: 6-8

INGREDIENTS

  • 3 large sweet potatoes, cubed

  • 1 tsp cinnamon

  • 1 tsp chili powder

  • 2 tbsp coconut oil

  • 4 cups black beans

  • 1 tbps chili powder

  • 1 tsp cumin

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp oregano

  • Corn tortillas

INSTRUCTIONS

Sweet Potatoes

Preheat the oven to 425. Add your cubed sweet potatoes to baking sheet. Add the coconut oil and place in the oven to melt. Remove from the oven and add the cinnamon and chili powder. Sprinkle with sea salt. Bake for 30 minutes or until cooked through.

Black Beans

In a pot, combine your black beans and spices and sea salt with a bit of water. Cook for 10-15 minutes, until spices and black beans are cooked down.

Corn Tortillas

Warm in the oven and prepare to serve.

Toppings

Once everything is finishing cooking, fill your corn tortillas with black beans and sweet potatoes, and your toppings. You can use homemade guacamole, sliced avocado, pickled onions, cilantro, lime – whatever combination of toppings you’d like.
