Carrot Ginger Slaw

A crunchy carrot slaw makes for a great pre-dinner salad or topping for sandwiches and wraps. Wonderful for hormone health and aiding in digestion too.
Carrot Ginger Slaw Recipe
Prep Time: 10 minutes | Cook Time: 0 minutes | Total Time: 10 minutes | Servings: 4
INGREDIENTS
2 tablespoons olive oil, melted
1 tbsp soy sauce
2 limes, juiced
2 tsp maple syrup
2 tbsp tahini
1 tsp Himalayan salt
1 piece ginger
1 honeycrisp apple, grated
5 carrots, shredded or grated
2 scallions, chopped
4 tbsp sesame seeds
INSTRUCTIONS
1. Prepare your veggies by grating them and placing them in a large bowl.
2. Prepare your dressing. Combine the olive oil, soy sauce, lime juice, maple syrup, tahini, Himalayan salt, and ginger. Add water to thin if needed.
3. Pour over the carrot mixture and toss with sesame seeds to finish.
