Herby Veggie Slaw

An excellent, healthy snack to kick off the spring season! Makes for a great appetizer for guests, a perfect accompaniment to a snack plate late, or an afternoon snack for you and/or your kiddos.

Try to get your herbs fresh from the farmer’s market – the newly harvested herbs will make all the difference in the quality of your dip!

Herby Veggie Dip Recipe

Prep Time: 10 minutes | Cook Time: 0 minutes | Total Time: 10 minutes | Servings: 4

INGREDIENTS

  • 1 ripe avocado

  • 1 cup sunflower seeds, soaked (4-6 hours)

  • 1 tbsp tahini

  • 5 scallions

  • 2 garlic cloves

  • ¼ cup lemon juice

  • 1 tsp sea salt

  • ¼ cup parsley

  • ¼ cup cilantro

  • ¼ cup basil

  • ¼ cup dill

INSTRUCTIONS

 1. Begin by preparing all of your ingredients. Then prep your food processor.

 2. Add your ingredients to the food processor and blend until smooth. If you need to thin the dip, add small amounts of water a little bit at a time. This will take a few minutes.

 3. Taste test the dip and make sure you don’t need additional salt or herbs. Adjust as needed.

 4. Spoon out into a bowl and serve with fresh spring veggies – snap peas, carrots, radishes, asparagus spears.
