Strawberry Rhubarb Bars

It’s just about that season – strawberry season! Bursting with berry flavor, these strawberry rhubarb bars are a healthy take on a sweet treat. Egg-free, dairy-free, gluten-free, and lightened sweetened, a perfect summer snack.

Strawberry Rhubarb Bars Recipe

Prep Time: 15 minutes | Cook Time: 60 minutes | Total Time:  1 hour 15 min | Servings: 16 bars

INGREDIENTS

 Filling

  • 1 cup strawberries, diced

  • 1 cup rhubarb, diced

  • ½ tsp lemon juice

  • 1 tsp coconut flour

  • 1 tsp maple syrup

  • ½ tsp vanilla extract


Crust + Topping

  • 1 cup rolled oats

  • ½ cup chopped walnuts

  • ½ cup almond four

  • ½ cup maple syrup

  • 1 tbsp ground flax

  • 1 tsp cinnamon

  • ¼ tsp sea salt

  • 2 tbsp coconut oil

 
INSTRUCTIONS

 Fruit Filling

 1.     In a medium bowl, combine the strawberries, rhubarb, coconut flour, lemon juice, maple syrup, and vanilla.

 Crust

1.     Preheat the oven to 350. Grease an 8x8 baking pan with coconut oil.

2.     Meanwhile, in a food processor, combine the oats, nuts, almond flour, maple syrup, ground flax, cinnamon, and salt. Pulse until combined. Then add the coconut oil and pulse again. If it needs additional liquid, add water 1 tsp at a time.

3.     Press 2/3 of the crust into the baking pan. Save the remainder for topping. Bake for 20 minutes or until golden brown. Once finished, let cool for 10 minutes.

Bars

1.     Spread the fruit filling over the crust. Add the remaining crumble/crust to the top. Sprinkle with additional rolled oats. Bake for another 15-20 minutes or until fruit is soft and topping is lightly golden. Remove from the oven and let cool before serving. Enjoy!
