Vegan White Bean Dip

Snack plate lunches are in. Creamy and delicious, this white bean dip is a great source of plant protein and fiber and a good excuse to eat your veggies.  

Vegan White Bean Dip Recipe

Prep Time: 15 minutes | Cook Time: 15 minutes | Total Time: 30 minutes | Servings: 6

INGREDIENTS

  • 2 cups cannellini beans

  • ¼ cup extra virgin olive oil

  • 1 lemon, juiced

  • 1 tbsp parsley

  • ½ tsp sea salt

  • ¼ tsp red pepper flakes

  • 3 garlic cloves

  • 3 tbsp water to thin

 INSTRUCTIONS 

1.        Combine all your ingredients in a high-speed blender or food processor until smooth. Add water to thin if necessary.  

2.        Serve with vegetables – carrots, celery, cucumber, radishes, crackers, homemade sourdough.  

3.        Store for 1 week in a glass container in the fridge.
