Chickpea Curry

Creamy and easy to make, this chickpea curry uses pantry staples and fresh greens and herbs for a perfect weeknight dinner.
Chickpea Curry Recipe
Prep Time: 15 minutes | Cook Time: 25 minutes | Total Time: 40 minutes | Servings: 4 - 6
INGREDIENTS
1 tbsp coconut oil
4 cups chickpeas
2 yellow onions
1 shallot
4 garlic cloves
2 tbsp curry powder
1 tbsp turmeric
1 tsp coriander
2 tsp Himalayan salt
1 tsp ginger
3 cans coconut milk
1 tsp lemon
1 bag spinach
½ cup parsley
½ cup cilantro
2 cups white jasmine rice, cooked
INSTRUCTIONS
Heat the coconut oil in a large pot over medium heat. Add the chopped onions, shallot and garlic and sauté until translucent. Once cooked down, add the spices and stir to combine.
Add the chickpeas and stir to combine with the spices. Then add the coconut milk and simmer for 10 minutes. Add the spinach and parsley and cook for another 10 minutes on low.
Once finished, add additional parsley, cilantro and lemon to garnish. Serve atop rice and enjoy!
