Watermelon and Mint Salad

There are so many wonderful ways to enjoy watermelon! Cool off this summer with this bright and fresh watermelon and mint salad – the perfect amount of sweet, salty, and crunch, this salad is great for pairing with all of your favorite backyard summer cookout dishes.
Watermelon and Mint Salad Recipe
Prep Time: 20 minutes | Total Time: 20 minutes | Servings: 4 – 6
INGREDIENTS
- 7 cups watermelon, cubed 
- 3 cups English cucumber, cubed 
- ½ cup red onion, thinly sliced 
- ½ cup fresh mint, chopped 
- ¼ cup pistachios, chopped 
- ½ cup feta 
Dressing
- 2 tbsp olive oil 
- 5 tbsp lime juice 
- ½ tsp sea salt 
- 1 tsp maple syrup 
 
INSTRUCTIONS
1. In a small bowl, whisk together the dressing ingredients – olive oil, lime juice, sea salt, and maple syrup. Set aside.
2. In a large bowl, combine the watermelon, cucumber, red onion, fresh mint, pistachios, and feta. Toss together gently and add the dressing.
3. Serve immediately and enjoy!
