Winter Radicchio Salad

This winter salad has all the right flavors, textures, and health benefits. It’s crunchy, flavorful, and packed with fiber and plant protein. Making homemade dressing will really elevate your salad experience. This salad is also great for holiday gatherings – full of color and flavor, it’s super satisfying.

Winter Radicchio Salad Recipe

Prep Time: 15 minutes | Total Time: 15 minutes | Servings: 4

INGREDIENTS

 Salad

  • 5 cups radicchio, shredded

  • 2 cups arugula

  • 1 cup winter lettuce

  • ½ cup chickpeas

  • ½ red onion, sliced thinly

  • ¼ cup walnuts, chopped

  • 2 tbsp hemp seeds

 Dressing

  • ½ cup olive oil

  • ¼ cup apple cider vinegar

  • 1 tbsp orange juice

  • 1 tbsp Dijon mustard

  • 1 medjool date

  • ½ tsp sea salt

 INSTRUCTIONS

 1.     Prepare your salad by prepping the radicchio and arugula. Add to a large serving bowl with the remaining ingredients.

 2.     In a blender, combine all dressing ingredients. Blend until emulsified. Pour into a mason jar for serving. Any remaining dressing can be stored in the fridge for 5 days.

 3.     When ready to serve, pour the dressing over the greens and combine. Enjoy!
