Einkorn Banana Bread

Makes 3 loaves! Grab your overripe bananas, fresh milled or store bought whole wheat einkorn flour and let’s get to work.
Einkorn Banana Bread Recipe

INGREDIENTS
9 overripe bananas
5 cups whole wheat einkorn flour
1 cup melted grass fed butter
1 cup coconut sugar
3 pasture raised eggs
3 tsp vanilla extract
3 tsp baking soda
1 tsp Himalayan salt
INSTRUCTIONS
Preheat your oven to 350. Prepare 3 bread baking dishes by oiling with coconut oil so the bread doesn’t stick.
Combine the bananas (peeled) with the melted butter, eggs, and vanilla extract into a blender. A much faster way to mash all of those bananas!
In a large mixing bowl, whisk together the einkorn flour, coconut sugar, baking soda and salt. Pour the blender banana mixture into the flour mixture and whisk to combine.
Pour into the bread pans and bake for 50 – 60 minutes. Cool for 20 minutes and then remove the banana bread from the pan. Top with fresh almond butter and enjoy!
