Detox Mason Jar Salads

Such a fun way to prep healthy and delicious salads for the week ahead!  They fit perfectly in your to-go bag, small cooler, or lined up in your fridge. You can eat these detox salads directly from the mason jar or simply pour them into a bowl, add your dressing, some extra toppings, and enjoy!

Detox Mason Jar  Salad Recipe

Prep Time: 15 minutes | Total Time:  15 minutes | Servings:  4 mason jars

INGREDIENTS

  •  ¼ cup arugula and lettuce

  • ½ cup chickpeas

  • 1 cup carrots, grated

  • 3 radishes, thinly sliced

  • ¼ cup red cabbage, diced

  • ¼ cup parsley, chopped

  • 2 tbsp pumpkin seeds

  • 1 tbsp hemp seeds

  • Handful of cilantro, chopped

 Dressing

  • ½ cup olive oil

  • ½ cup tahini

  • 2 tbsp lemon juice

  • ½ cup parsley

  • ½ cup water

  • 1 garlic clove

  • 2 tsp maple syrup

  • Sea salt 

INSTRUCTIONS 

1.     Begin by making your dressing. Add all ingredients to a high-speed blender and blend until smooth. Add additional water to thin as you go if needed. 

2.     Next, prepare all of your veggies and begin to assemble your salads. Your greens will go in last so that they don’t get squished into the bottom of the jar.  

3.     Begin by putting a layer of chickpeas, followed by carrots, radishes, red cabbage, parsley, cilantro, pumpkin seeds, hemp seeds, and then arugula and lettuce. 

4.     Prep as many jars as you’d like and don’t be afraid to play around with the ratios of ingredients. If you have room in your jars, add a bit more chickpeas or lettuce or your favorite raw veggie. Otherwise, you can leave room in your jars at the top so that you can add dressing when you are ready to eat.  

5.     When ready to eat, you can dump the contents of the salad into a bowl and drizzle with dressing or pour your dressing directly into the jar and shake! 

Note: You are using 24-32oz mason jars here for your salad.
