Lemon Loaf Cake

A refreshing sweet treat that's perfect after any meal. Ideal for summer parties or as a light weeknight dessert.

Lemon Loaf Cake Recipe

Prep Time: 10 minutes | Cook Time: 35 minutes | Total Time: 45 minutes |Servings: 10

INGREDIENTS

  • 2 cups einkorn flour

  • ½ cup coconut sugar

  • ¼ cup maple syrup

  • 2 tsp baking powder

  • 1 tsp himalayan salt

  • ½ cup coconut oil, melted

  • ¼ cup lemon juice

  • 2 tbsp lemon zest

  • ½ cup coconut milk

  • 1 tsp vanilla extract

INSTRUCTIONS 

1.        Preheat oven to 350 and oil a loaf pan with coconut oil.  

2.        In a large bowl, mix the einkorn flour, coconut sugar, baking powder and salt together until combined. Add the coconut oil, coconut milk, lemon juice, lemon zest and vanilla and fold together.

 3.        Pour the batter in the loaf pan and bake for 35 minutes. When finished, remove from the oven and let cool for 20 minutes.
