Summer Lentil Burgers

Skip the frozen veggie burgers and make your own! These are so easy and versatile and truly so satisfying. Packed with veggies and herbs, they have wonderful flavor and go great over a summer salad or on your favorite sourdough bun.
Summer Lentil Burgers Recipe
Prep Time: 20 minutes | Cook Time: 10 minutes| Total Time: 30 minutes| Servings: 6 - 8
INGREDIENTS
4 cups French green lentils, cooked
2 red onion
2 garlic cloves
2 carrots
2 cups parsley
1 cup cilantro
¼ cup rolled oats
2 tsp paprika
2 tsp cumin
1 tsp onion powder
1 tsp pepper
1 tbsp tomato paste
INSTRUCTIONS
1. Preheat the oven to 400 degrees. Prepare a baking sheet with unbleached parchment paper.
2. Place the onion, garlic, carrots in a food processor, process on high until grated. Remove into a large bowl. Add half of the lentils, cilantro, parsley and spices to the food processor and process until smooth, remove in the large bowl. Add the oats to the food processor and remove into the large bowl. Add the remaining lentils.
3. Mix together, adding tomato paste until everything is combine. Add a bit of olive oil if it needs a binding agent. Prepare the burgers by rolling into burger mounds and placing on a baking sheet. This should make 12 – 18 burgers depending on how large you make them.
4. Bake in the oven for 15 minutes. Remove and flip to bake on the other side. Bake for another 15-20 minutes.
5. Serve the burgers on sourdough buns or over top a large summer salad. Top with avocado, tahini, sriracha, and fresh summer veggies.
