Raspberry Coconut Chia Pudding

The perfect treat for your Valentine! Lightly sweetened and bursting with berry color, this raspberry coconut chia pudding makes a great breakfast, snack on-the-go, or sweet dessert.
Raspberry Coconut Chia Pudding Recipe
Prep Time: 5 minutes | Soak Time: 8 hours | Servings: 2
INGREDIENTS
1 cup raspberries
6 tbps chia seeds
1 cup coconut milk
½ cup coconut yogurt
1 tsp lemon juice
1 tbsp maple syrup
1 tsp vanilla extract
Sprinkle of sea salt
Homemade granola for topping
INSTRUCTIONS
Mash the raspberries and combine in a mixing bowl with the chia seeds, coconut milk, coconut yogurt, lemon juice, maple syrup, vanilla extract and sea salt.
Place into a mason jar and seal. Put in the fridge overnight or for 8 hours. Enjoy topped with fruit and granola!
