Raspberry Coconut Chia Pudding

The perfect treat for your Valentine! Lightly sweetened and bursting with berry color, this raspberry coconut chia pudding makes a great breakfast, snack on-the-go, or sweet dessert.  

Raspberry Coconut Chia Pudding Recipe

Prep Time: 5 minutes | Soak Time: 8 hours | Servings: 2

INGREDIENTS

  • 1 cup raspberries

  • 6 tbps chia seeds

  • 1 cup coconut milk

  • ½ cup coconut yogurt

  • 1 tsp lemon juice

  • 1 tbsp maple syrup

  • 1 tsp vanilla extract

  • Sprinkle of sea salt

  • Homemade granola for topping

INSTRUCTIONS

  1. Mash the raspberries and combine in a mixing bowl with the chia seeds, coconut milk, coconut yogurt, lemon juice, maple syrup, vanilla extract and sea salt. 

  2. Place into a mason jar and seal. Put in the fridge overnight or for 8 hours. Enjoy topped with fruit and granola!
