Einkorn Dutch Baby Pancake

In the spirit of maple sugaring season, let’s celebrate by drizzling freshly boiled maple syrup over a giant Dutch baby pancake! Add fruit and enjoy.
Einkorn Dutch Baby Pancake Recipe
Prep Time: 5 minutes | Cook Time: 15 minutes | Total Time: 20 minutes | Servings: 6 - 8
INGREDIENTS
8 pasture raised eggs
1 ¾ cup A2 A2 milk
2 cups whole wheat einkorn flour
1 tsp salt
2 tsp coconut sugar
2 tsp cinnamon
1 tsp vanilla extract
4 tbsp maple syrup
5 tbsp grass fed butter (for skillet)
INSTRUCTIONS
1. Preheat the oven to 425 degrees. Preheat the cast iron skillet in the oven.
2. In a blender combine all the ingredients – eggs, milk, flour, salt, coconut sugar, cinnamon, vanilla, maple syrup.
3. Once that oven is preheated, remove the cast iron skillet (carefully with mitts), add the butter and then pour the mixture into the skillet.
4. Bake at 425 for 15 min until golden on top. Slice like a pie, sprinkle with powdered sugar (strictly aesthetic) and top with fresh berries!
