Soba Noodle Stir Fry

A quick and easy weeknight dinner, these soba noodles come together fast! Loaded with texture and flavor, this dish can really brighten up an otherwise, boring mid-winter mood.
Soba Noodle Stir Fry Recipe
Prep Time: 20 minutes | Cook Time: 10 minutes | Total Time: 35 minutes |Servings: 2-3
INGREDIENTS
Soba noodles, 8oz.
1 cup chickpeas
2 cups broccoli, chopped
2 carrots, chopped
1 pepper, chopped
1 onion, chopped
2 scallions, diced
1 tbsp toasted sesame oil
1 handful of basil leaves, chopped
1 tbsp sesame seeds
Sauce
1/3 cup coconut aminos
1 tbsp rice wine vinegar
2 tbsp maple syrup
1 tbsp sesame oil
3 garlic cloves, minced
1-inch ginger, minced
1 tsp red pepper flakes
INSTRUCTIONS
1. Begin by making the sauce. In a small dish, combine the coconut aminos, rice wine vinegar, maple syrup, sesame oil, garlic, ginger, and red pepper flakes. Whisk together and set aside.
2. Cook your soba noodles according to the package instructions.
3. Meanwhile, heat the sesame oil over medium heat and sauté the broccoli, carrots, peppers, and onions for 4-5 minutes. Add a bit of the sauce to help cook the veggies down, along with some fresh chopped basil. Stir together for another few minutes, leaving the veggies bright and with a bit of crunch (don’t overcook).
4. Add the chickpeas, sauce, and soba noodles to the pan. Toss to combine.
5. To serve, dish out into bowls and top the noodles with any remaining sauce, basil, scallions, and sesame seeds. Enjoy!
