Vegan Pumpkin Spelt Bread

The simplest pumpkin bread with the richest fall flavor! The smells of this bread baking fill your whole home with the scents of autumn. Enjoy this healthy and easy pumpkin bread for breakfast or an afternoon snack!

Vegan Pumpkin Spelt Bread Recipe

Prep Time: 10 minutes | Cook Time: 55 minutes | Total Time: 65 minutes | Servings: 1 bread loaf

INGREDIENTS

  • 2 cups spelt flour

  • ½ cup coconut sugar

  • ¼ cup maple syrup

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tbsp pumpkin pie spice

  • 1 tsp cinnamon

  • ½ tsp sea salt

  • 1 tsp vanilla extract

  • 1/3 cup coconut milk

  • 1/3 cup coconut oil, melted

  • 1 can pumpkin puree (real pumpkin)

INSTRUCTIONS 

1.     Preheat the oven to 350 degrees. Grease your bread load pan with coconut oil and set aside.

 2.     In a medium bowl, combine spelt flour, baking powder, baking soda, spices and salt.

 3.     In a small bowl, combine the maple syrup, coconut oil, coconut sugar, coconut milk and vanilla extract. Add the pumpkin puree and whisk.

 4.     Pour the wet mixture into the flour bowl until combined.

 5.     Pour the batter into the prepared loaf pan and sprinkle a bit of coconut sugar on top. Place in the oven on center rack and bake for 55-60 minutes.

6.     Remove from the oven and let cool for 10 minutes before serving. Remove loaf from pan and let the bread cool on a wire rack prior to serving. Enjoy with hot tea or lathered in almond butter!
