5 Healthy Ways to Eat Potatoes That Everyone Should Try

One popular opinion that grinds my gears is that potatoes aren’t healthy. No, I’m not a “meat and potatoes” kind of girl but I’m definitely a potato kind of girl. As a vegan, potatoes come in big for me. I love the way they taste and they are one of my go-to items to make a lot of meals versatile, hearty, and complete. I’d guess that the whole thought process of potatoes not being good for your diet originated during the low-carb fad days. I personally decide if something is healthy and good for me by asking myself these three questions- Does it have nutritional value? Is it only made out of whole ingredients? And how does it digest? Potatoes have passed the test for me, yet I have even found myself googling “Are potatoes healthy?” to put the theory to rest or understand the bad press. After going through the nutritional profiles of different potatoes and learning that they are rich in vitamins, minerals, and antioxidants, I will happily keep tossing the bag of potatoes in my grocery cart. If you love potatoes and want to use them mindfully (aka don’t pair them with tons of milk and butter or a can of store-bought gravy) here are 5 healthy ways to cook potatoes. 

Crispy Oven Baked Fries

Fries were a must when I went out to eat or ate fast food growing up. Remember the pure sadness that would hit when you’d fish around the bottom of the bag and there was nothing left to grab? Remember the pure joy you experienced when you thought the bag was empty but there were actually still a few more left? I stopped eating fries for a while but then I realized if I make them myself, I can control the ingredients. Now I can’t decide what I loved more as a kid, fries or mashed potatoes. It hit me recently to try making a mashed potato bowl and now it’s becoming one of my favorite things to make. One thing that I need to put on my to-do list is to learn how to make a taco that looks like a taco that’s served in a restaurant. I make them often enough that I should have it down by now but since I have no real strategy and create my own recipes on the fly, I just sort of throw the ingredients in the taco and it’s anything but presentable and cute (tastes good though).
