June is National Dairy Month, and June 4th is National Cheese Day! You might assume that vegans won’t have much to celebrate, but au contraire! Vegan cheese may seem like a “new” thing but it dates back to 16th century China where it was made with whole soy or fermented tofu. So what does vegan cheese consist of? Well, it varies.
