Autumn Kale + Apple Salad

This harvest salad combines all the flavors and textures that fall has to offer in a big, beautiful bowl. It's crunchy, salty, sweet, and healthy.  

Autumn Kale + Apple Salad Recipe

 Prep Time: 15 minutes | Cook Time: 0 minutes | Total Time: 15 minutes | Servings: 4

INGREDIENTS

  • 1 bunch of curly kale, chopped

  • 1 bunch of lacinato kale, chopped

  • 1 honeycrisp apple, thinly sliced

  • ½ small red onion, thinly sliced

  • 2 carrots, shredded

  • ½ cup sprouted pumpkin seeds

Dressing

  • ½ cup olive oil

  • ¼ cup apple cider vinegar

  • 2 tbsp Dijon mustard

  • 3 tbsp tahini

  • 1 small shallot

  • 1 garlic clove

  • 1 tbsp maple syrup

  • 1 medjool date, pitted

  • Salt to taste

INSTRUCTIONS

1.       Prepare your harvest salad by prepping all of your salad ingredients first in a big bowl.

 2.       To make the dressing, combine all ingredients in a high-speed blender and emulsify until combined.

 3.       Pour the dressing over the salad and toss to combine. Serve and enjoy!
