Roasted Parsnips + Carrots
These roasted carrots and parsnips are a great side dish to celebrate the harvest season. They are perfectly savory and sweet. Pair with grilled salmon and a salad, bring along for the holidays or add to harvest bowls.
Roasted Parsnips + Carrots Recipe

INGREDIENTS
1 lb carrots, cut lengthwise
1 lb parsnips, cut lengthwise
4 tablespoons coconut oil
2 tablespoons raw honey
1 tsp sea salt
2 tsp rosemary
INSTRUCTIONS
1. Preheat the oven to 400 degrees. Prep your carrots and parsnips by washing and cutting into lengthwise pieces.
2. Combine your roasting dressing by whisking together the coconut oil, honey salt and rosemary. Stir together with the carrots and parsnips.
3. On a baking sheet, spread the carrots and parsnips evenly and roast for 30 minutes until cooked through and caramelized.
4. Remove from the oven and let cool. Serve with fresh rosemary and salt to taste.
