Bean, Corn and Tomato Salad

Loaded with the fresh flavors of summer, this quick and easy bean, corn and tomato salad is the perfect side dish for picnics and potlucks!

Bean, Corn and Tomato Salad Recipe

Prep Time: 15 minutes | Servings: 6

INGREDIENTS 

  • 6 ears of corn, shucked and cooked

  • 2 cups black beans

  • 3 cups cherry tomatoes, halved

  • ½ cup red onion, diced

  • ½ cup basil

  • ½ cup feta (optional)

  • 1/3 cup extra virgin olive oil

  • 1 tsp raw honey

  • 1 garlic clove

  • 1 lime, juiced

  • 2 tbsp apple cider vinegar

  • 1 tsp himalayan salt

INSTRUCTIONS

 1.        Prepare the salad dressing by combining the olive oil, honey, garlic, lime, apple cider vinegar and salt in a blender. Blend until smooth.

 2.        In a large serving bowl, combine the corn kernels, black beans, cherry tomatoes, red onion and basil. Pour dressing over top and garnish with additional basil and salt. Enjoy!
