Spring Pea Pesto

Vibrant and inviting, this pea pesto is bursting with spring flavor from the sweet peas and the herbs! A really beautiful dip or spread for vegetables, perfect for pasta or layered on a veggie sandwich.
Spring Pea Pesto
Prep Time: 10 minutes | Total Time: 10 minutes | Servings: 2 cups
INGREDIENTS
2 cups of spring peas
½ cup of dill, basil and mint (or other spring herbs)
1 lemon, zest
2 tbsp lemon juice
1 tbsp scallions
1 tsp Himalayan salt
½ cup nutritional yeast (or fresh raw parm)
¼ cup olive oil
INSTRUCTIONS
1. Combine all ingredients in a food processor. Pulse until the peas begin to emulsify.
2. Serve immediately for dipping or as a spread. Enjoy!
