Vegan Mushroom Fajitas

There really is no wrong way to make a fajita. Grab a few portobello mushrooms and some peppers, add in whatever other veggies you have on hand and make yourself a delicious, healthy plant-based dinner. A great weeknight meal, this dish comes together in less than 30 minutes. The meaty mushrooms and brightly colored peppers with the smoky spices make for a fun and festive celebration anytime. Kick it up a notch!

Vegan Mushroom Fajitas Recipe

 Prep Time: 10 minutes | Cook Time: 15 minutes | Total Time: 25 minutes | Servings: 6 (12 Tacos)

INGREDIENTS

  • 5 portobello mushrooms, sliced

  • 1 large onion, sliced

  • 5 bell peppers (red, orange, yellow, green), sliced

  • 2 garlic cloves, minced

  • 1 tablespoon chili powder

  • 2 teaspoons cumin

  • 2 teaspoons smoked paprika

  • ¼ teaspoon chipotle powder

  • 1 teaspoon salt

  • 3 avocados

  • 1 lime

  • 1 cup yogurt (mild coconut)

  • 12 taco tortillas

INSTRUCTIONS

 1.     In a large skillet, heat a tablespoon of avocado oil over medium heat. Add the onions and bell peppers, and all the spices. Toss to combine and sauté for 3-5 minutes.

 2.     Next, add in the portobello mushrooms and continue to sauté the fajita mix, stirring carefully until the portobellos are cooked through, 10 minutes. 

3.     Meanwhile, prepare your toppings! Throw together a quick guacamole with the avocados, lime, and salt, or slice your avocados for garnish. You may also mix a bit

lime into your yogurt to make a vegan lime sour cream to top your tacos.

 4.     Once the fajita mix is finished, warm your tacos in the oven or over the stovetop. Fill each tortilla with the portobello mushroom mix and top however you like! Salsa would be a great addition too! Enjoy.
