3 Great Recipes for Vegan Open-Faced Sandwiches

Open faced sandwiches are my favorite. You can see all of the ingredients piled high atop your slice of bread, the perfect lunch, snack or accompaniment to a green salad or vegetable soup.
Originally a tradition of the Danish, open faced sandwiches and different styles of “toast” have become popular around the world. Of the most notable, avocado toast has long since made its debut, going on to become a millennial icon but satisfying palates across generations.
With so many different ways to make a delicious open faced sandwich, the most important ingredient is the bread! Skip the wonder bread and flat white processed bread, and go for a real piece of thick toast made from whole grains and sourdough. Of course, if you are gluten free, find an alternative that works best for you!
Once you have your bread, assemble your remaining ingredients. Lightly toast your hunk of sourdough and apply any of the below toppings. Whether you prefer sweet or savory, there’s a toast here for everyone.
1. Avocado Toast + Radish + Hemp Seeds
Ingredients
½ avocado
½ lime, squeezed
1 radish, thinly sliced
1 tsp hemp seeds
Sprinkle sea salt
Instructions
1. In a small bowl, mash your avocado with lime. Spread onto your toast.
2. Layer with radish and sprinkle with hemp seeds and sea salt. Enjoy!
2. Sunflower Scallion Aioli + Tomato + Pickled Onion
Ingredients
½ cup cashews, soaked for 6 hours
1 cup sunflower seeds, soaked for 6 hours
2 garlic cloves
3 scallions
1 lemon, juiced
½ tsp sea salt
1 ripe tomato, sliced
Instructions
1. Combine the cashews, sunflower seeds, garlic, scallions, lemon and sea salt in a high speed blender. Blend until smooth and creamy. Keep leftovers in a sealed container in the fridge for up to 1 week.
2. Spread a dollop of aioli onto your toast. Then layer with tomato and pickled onions. Garnish with extra chopped scallions.
3. Almond Butter, Honey Drizzle + Strawberries
Ingredients
3 tbsp almond butter
2 strawberries, thinly sliced
1 tsp raw honey
Sprinkle cinnamon
Instructions
1. Spread your almond butter over your toast. Layer the strawberries and drizzle your honey over top. Sprinkle a bit a cinnamon and enjoy!
