Spring Cleanse Salad

Banish the winter blue’s with this spring cleanse salad. If you haven’t taken a trip to the farmer’s market yet, this is your chance! Most of the ingredients in this recipe will be newly available at your local farmer’s market – all in abundance as we welcome the new spring season.
Inherent in their nature, the greens and vegetables in this salad recipe are known for their cleansing properties – coming at the time of year when we shed our winter layers and restore nutrient levels and rehydrate for impending warmer temperatures. These vegetables are cleansing for the body – high in fiber and water content and help to aid in the elimination of toxins, decrease inflammation and stagnation of the liver and lymph systems, and promote digestion.
Chopped Spring Cleanse Salad Recipe
Servings: 2-4 | Prep Time: 10 minutes | Cook Time: N/A | Total Time: 10 minutes
INGREDIENTS
1 head kale, chopped
1 bag arugula, chopped
1 bag spinach, chopped
2 radishes, chopped
1 carrot, shaved
½ cucumber, chopped
1 handful microgreens
5 chives, chopped
3 tbsp hemp seeds
Dressing
½ cup olive oil
¼ cup apple cider vinegar
¼ cup Dijon mustard
1 small shallot
1 tbsp maple syrup
Salt and pepper to taste
INSTRUCTIONS
1. Chop all of your ingredients and add them to a big salad serving bowl.
2. In a blender, combine all dressing ingredients and blend until frothy and emulsified. Pour a small amount over your salad until lightly dressed. This dressing recipe will make extra, store the remaining in a glass jar in the fridge for up to 1 week.
