Apple & Brussels Sprouts Salad

A great side salad or the main dish, this apple Brussels salad comes together with ease. Shaved apples and shaved brussels sprouts make for a crunchy salad meets slaw. Add in toasted walnuts and pungent red onion, hemp seeds for a plant-based protein boost. The dressing is creamy and inspired by the flavors of fall. Wow your holiday guests or make in bulk for pack n’ go lunch salads.
Apple & Brussels Sprouts Salad Recipe
Prep Time: 20 minutes | Total Time: 20 minutes | Servings: 4-6
INGREDIENTS
Salad:
1 lb Brussels sprouts
1 Honeycrisp apple, thinly sliced
1 red onion, thinly sliced
1 cup toasted walnuts, chopped
2 tbsp hemp seeds
Dressing:
1 cup tahini
1 cup filtered
2 tbsp Dijon mustard
2 tbsp apple cider vinegar
1 tbsp maple syrup
1 garlic clove
½ tsp sea salt
INSTRUCTIONS
1. In a medium-sized bowl, combine the shaved apples, shaved brussels sprouts, red onion, toasted walnuts and sprinkle with hemp seeds.
2. In a high-speed blender, combine the dressing ingredients. Blend to emulsify and add water to thin until you’ve reached the desired consistency – it should be creamy but thin.
3. Pour the dressing over the salad and mix with tongs to combine. Enjoy!
Note: Save any leftover dressing in the fridge for 3-4 days. If you make the salad in bulk, do not dress it until ready to serve.
