Baked Black Bean Burgers

Let’s be honest, there’s no such thing as a bad time for a burger, even if you’re on a plant-based diet. Sure, you could buy something like Beyond Meat, but you can also make your own meatless patties. Flavored with Mexican spices, this Black Bean Burger will add an extra kick to your regular menu. It’s a great twist on a classic hamburger and adds a bit of flare atop a seasonal salad. The best part is that these burgers are baked rather than saturated in inflammatory oils and fried, so they are both healthier and easier to make. We call that a win-win.
Black Bean Burger Recipe
Servings: 4-6 | Prep Time: 15 minutes | Cook Time: 30 – 45 minutes | Total Time: 60 minutes
INGREDIENTS
4 cups black beans
1 tablespoon avocado oil
1 red onion, chopped
3 garlic cloves, minced
½ red pepper, chopped
½ cup oat flour
2 tablespoons hemp seeds
1 tablespoon walnuts
2 tablespoons ketchup
2 flax eggs
2 tbsp chili powder
1 tbsp paprika
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
1 tsp sea salt
INSTRUCTIONS
1. Preheat the oven to 375. Prepare 2 baking sheets with parchment
2. Meanwhile, sauté the red onion, pepper, and garlic over low heat in olive oil until translucent and soft.
3. Add the pepper and onion mixture to a food processor. Add the ketchup, spices, and flax eggs, oat flour, hemp seeds, and walnuts. Bring to a blend. (flour, hemp seeds, and walnuts create bread crumb mixture).
4. In a large bowl, combine the mixture from the food processor with the black beans. Gently mash with a fork to combine.
5. Combine your mixture into burger patties and place on the baking sheet. Fill each sheet with ~ 6 burgers. Place into the oven and bake for 30 – 45 minutes until crisping on the outside. Check at the halfway mark to flip the burgers.
6. When finished, enjoy as a traditional burger topped with avocado, hot sauce, ketchup, lettuce, and tomato, throw it on a salad or enjoy it in a wrap.
