Sweet Summer Strawberry Lemonade

The collision of summertime and strawberry season is no coincidence. Summer is the perfect time to enjoy strawberries when they’re perfectly ripe and red, found at the farmer’s market and local farm stands, freshly picked off the vine.

This combination of strawberries and lemonade is a super simple, light, and refreshing classic. But we've given it a healthier spin. Some lemonade recipes call for processed sugar, which is nothing but empty calories that can also cause a spike in blood sugar levels. This version replaces sugar with maple sugar or honey (whichever you prefer) which are both lower on the glycemic index than sugar and both are full of helpful antioxidants.

So, after you’re finished satisfying your sweet tooth with strawberry rhubarb pie and homemade jam, save some strawberries to make this delicious cooling berry lemonade that’s great as a mocktail or as sweet something to sip in the afternoon sun!

 

Strawberry Lemonade

 Prep Time: 5 minutes | Total Time: 10 minutes | Serving: 8 cups

 INGREDIENTS

  • 6 cups filter water

  • 2 cups strawberries, destemmed

  • 1 ½ cups lemon juice, freshly squeezed

  • 1/3 cup maple syrup or honey

     

INSTRUCTIONS

 1.     In a high-speed blender, place the strawberries, 1 cup of water, lemon juice, and maple syrup. Blend until pureed.

 2.     In a large pitcher, add the remaining 5 cups of water. From the blender, pour your strawberry mixture into the pitcher. Stir with a large spoon to combine.

 3.     Leave in the fridge to cool or serve immediately over ice with added strawberries for garnish.
