Grilled Summer Veggie Skewers

An effortless way to use your garden produce or summer veggies from the farmer’s market, these grilled veggie skewers are perfect for easy weeknight dinners, BBQs, and parties alike. So, gather up your seasonal produce and simplify backyard grilling. Just add your favorite sauce or brighten your veggies with fresh green pesto!
Grilled Veggie Skewers Recipe
Prep Time: 5 minutes | Cook Time: 25 minutes | Total Time: 30 minutes | Servings: 4-6
INGREDIENTS
1 red bell pepper
1 yellow bell pepper
1 green bell pepper
1 red onion
1 white onion
1 eggplant
2 zucchini
2 portobello mushroom
2 tbsp avocado oil
Sprinkle of salt and pepper
INSTRUCTIONS
1. Prepare your grill and prep your veggies – chop your vegetables into large chunks that will slide onto your skewers. Set aside.
2. On a baking sheet, assemble your skewers by adding the vegetables in layers – in chinks that are large enough that they won’t fall off! Brush or drizzle with avocado oil and garnish with salt and pepper.
3. Place on your grill and cook until grill marks are present, and the vegetables are tender and cooked through, about 10 minutes. Flip at the halfway make to cook evenly. Remove from the grill and drizzle with your favorite summer pesto or dipping sauce. Enjoy!
